Speculoos are spice cookies traditionally eaten in Belgium or in the north of France. They're given and eaten by children when St Nicolas is bringing gifts, on December 6th.
To my mind, there is no better cookie to enjoy with a cup of coffee or tea. Thin, crunchy, spicy yay

Here is the recipe :
500gr flour
375gr brown sugar
250gr butter
½ tbsp cinnamon
1 tbsp spices (ginger, nutmeg etc)
2 eggs
100gr almonds (powder)

Mix all the ingredients together and leave the mixture in a cold place till the next day.
Roll out the dough. Cut it into shapes. Place all on a cooking tray.
Cook for 15min at low heat.

i looove them!

we eat them a lot in germany for christmas / st. nicholas.

i never had the idea to make them myself, but great there is such an easy recipe for it!
definitly will try it end of the year =)

have you already tried it meghan?

Yes, I did but not with this recipe. In fact, I wanted to make shortbread cookies but they were too cooked and when I ate them they had the taste of speculoos...So I search for you a real recipe which is this one. smile
And it was very delicious in love

Oh year, I love speculoos too (got belgian origins so...)! But it's quite hard to find good ones in shops. Too much sugar most of the time that's why cooking by yourself is a good way to do them exactly like you want. Sure I'll try your recipe Meghan! Thanks for sharing it! yay
